Recipe: Simple Sugar Cookies

Sugar cookies are possibly the easiest type of biscuit to make. Containing just four ingredients; they’re made from store cupboard essentials and can be ready in under 15 minutes. Best of all they’re perfect for making with kids as their flat surface is ideal for decorating!

I went for a couple of different icing techniques; a basic water icing and pre-made icing pens. With the water icing, I created it in a bowl and dunked the biscuits in to ensure an even covering. I chose to decorate on top of the water icing with the pre-made pens as I’m a big of a sweet-freak when it comes to biscuits but it’s entirely up to you. You can follow our lead and go for a plain biscuit or attempt a festive theme like our Christmas pud! So here we go… simple sugar cookies…

You will need:

  • 100g butter (softened)
  • 100g caster sugar
  • 1 egg (beaten)
  • 250g plain flour

To ice:

  • Pre-made icing pens or
  • 400g icing sugar
  • 3-4 tbsp water
  • Food colouring

Recipe:

  1. Heat the oven to 190°C
  2. Combine the butter and sugar together beating in the egg a little at a time
  3. Stir in the flour bit by bit
  4. Lightly flour your worktop and roll out the dough to approximately a finger thick
  5. Use a round cutter to cut your biscuits out (we used a glass!) and place onto a baking tray lined with greaseproof paper
  6. Cook for 8 minutes until pale brown, remove and allow to cool
  7. To ice either use pre-made icing pens or create a water icing.
    1. To create a water icing combine 400g icing sugar with 3-4 tbsp of water to create a paste.
    2. Add any required food colourings, stir well and coat your biscuits!
  8. Allow your icing to harden and enjoy!

      Surely the perfect way to start the day? I have to admit to OD-ing on icing when we made them… sugar high for days!
